L’Albufera
Apart from the originality of the fusion dishes and mousses, which have a clear culinary design, the star dish at L’Albufera is paella. L'Albufera’s philosophy is therefore to offer haute cuisine, specialising in the best that rice has to offer. It owns several establishments throughout the city (in Majadahonda and in the Meliá Castilla hotel). Among the classic dishes, the Valencian rice dishes, the signature and mixed rice dishes, lobster paellas, black rice, fisherman’s rice arroz ciego (blind rice) and vegetable rice dishes as well as fideuás (Catalan noodle dish) and arroces melosos (sweet rice) are outstanding. In addition, guests can enjoy wild, grilled fish from Galicia, either cooked with salt or accompanied by sauce, among which the all i pebre (garlic and paprika) angler and crayfish stands out. And for those who prefer the grill, there are also exquisite alternatives cooked over charcoal coals.

St. James
St. James is found right in the heart of the Salamanca district, and offers one of the best rice menus in Madrid.
